Easy Chocolate Chip Snack Cake

In a world of boxed cake mixes and packaged cookies, we seem in many ways to have lost touch with simple pleasures like community and conversation, and made from scratch baking.

Ask someone how they're doing or feeling, but don't expect an answer that has anything to do with reality, because in our culture everybody's fine.

It's a handy cake mix response that enables us to continue rushing through our days without ever having to convey what's really going on inside.

Most children nowadays do not understand the simple pleasure of a glass of milk and a real cookie or piece of cake after school. A sit down with mom or dad to tell them about the day, and a real conversation that isn't being interuppted by the buzzing of a text message coming in.

That's where we foodies come in.

I think the popularity of cooking, baking, and sharing is our way of trying to make sense of an increasingly hectic, media driven world.

We find balance by planting gardens, planning dinners and baking cakes.

With that in mind, and in an eternal effort to maintain balance and sense of joy, I present today's offering because I just love this recipe...

Oooey, gooey, chocolate good! You won't believe how moist this cake is.

Chocolate Chip Snack Cake

Ingredients

* 1 3/4 cups boiling water
* 1 cup quick-cooking oats
* 1 cup brown sugar
* 1 cup white sugar
* 1/2 teaspoon salt
* 1/2 cup margarine or butter
* 2 eggs
* 1 3/4 cups flour
* 1 teaspoon baking soda
* 1 tablespoon cocoa
* 1 and a half cups chocolate chips

1. Pour water over oatmeal and let stand for 10 miunte
2. Add sugars and margerine and mix well
3. Add eggs and mix
4. Add dry ingredients except chips and mix.
5. Add 1/2 of the chocolate chips.
6. Pour batter into greased 9x13 pan.
7. Top with the remaining chocolate chips
8. Bake at 350 for 40 minutes.

    ALL IN THE NAME OF PROGRESS AND MAKING THINGS EASIER AND MORE CONVENIENT, WE'VE LOST SO MANY ASPECTS OF THE JOYS OF COOKING SOMETHING MADE WITH LOVE AND SIMPLE INGREDIENTS.
