Peter Cottontail's Easter Deviled Eggs

With Easter just around the corner, a group of fabulous foodie friends from The Canadian Cookies have decided to join forces to bring you a virtual Easter Egg Hunt/recipe relay countdown to Easter!

As I'm planning a brunch this year, I decided to do a Kitchen Witch twist on ham and eggs and will be serving my gorgeous recipe for Roast Ham in a Curried Apple Glaze accompanied by these fun and colourful deviled eggs!


Who says Easter eggs only come coloured on the outsides?

These super fun and easy to make little treats will add that little something extra to your Easter table to let your friends and family know how very special they are.

So here's how you do it...

Start by hard boiling 24 eggs. Cool and peel.

Prepare your dye by mixing four separate colours in four separate medium bowls in two cups of water each.

Using a sharp knife, cut the eggs in half lengthwise and immerse them in the coloured waters and continue ti soak until they become the colour you desire. You will be doing 8 egg halves per colour.

Remove from the dye to paper towels and deposit your yolks into separate bowls according to colour. You may want to add a little extra food colouring to the yolks to get the desired effect.



Mix the yolks using your favourite recipe for deviled eggs. I use about 1 Tbsp of Hellman's mayonnaise, a dab of hot mustard, salt and pepper.

Place the yolks into their corresponding coloured cups, and VOILA! You've got something fun on the table that everyone will be talking about.

Better still is the surprise that you get biting in. The colours lead the brain to think this will be a sweet treat, but they still taste exactly like the savoury little deviled eggs they are!
