I've been a little scarce this week, I know. This was in honour of Canada Day - which was last weekend and the 4th of July.
I'm also still getting organized for summer here at The Kitchen Witch and have all kinds of amazing new recipes to share along with our regular features.
In the meantime, though, it is Saturday and today's easy to make recipe for stuffed Cannelloni is a weekend worthy way to sneak sweet potatoes into a dish the whole family is going to love. Using ready made pasta sheets makes it that much easier, but if you make your own pasta, keep this filling in mind for ravioli.
